Reheating Instructions

Heating instructions are guidelines only, as oven temperatures vary, and heating multiple items at once will increase cooking times. Please heat all food to an internal temperature of 165 F and adjust cooking times accordingly.

16-18lb Whole Turkey

  1. Heat oven to 350F.
  2. Remove turkey from packaging and place breast side up in a pan supported by a baking sheet. Add 1 ½ cups of water and cover with foil.
  3. Bake on center oven rack for 2 hours covered.
  4. Carefully remove turkey from oven. Remove foil and return to oven. Bake an additional 30 minutes or until internal temperature reaches 165 F.
  5. Remove turkey from oven and allow to rest 10 minutes before carving.
  6. Pour pan drippings over hot sliced turkey just before serving or use to make gravy.

 

20-22lb Whole Turkey

  1. Heat oven to 350F.

  4. Carefully remove turkey from oven. Remove foil and return to oven. Bake an additional 30 minutes or until internal temperature reaches 165 F.

  6. Pour pan drippings over hot sliced turkey just before serving or use to make gravy.

 

16-22lbs of Carved Turkey

  1. Heat oven to 350F.
  2. Place foil pans into the oven with the lid on, and bake for 1.5-2 hours with lid on.
  3. Carefully remove turkey from oven. Remove foil lids and return to oven and cook again for 15-20 or until internal temperature reaches 165F. Remove pans from oven & serve.

 

Boneless Turkey Breast

  1. Heat oven to 350F.
  2. Place foil pan into the oven with the lid on, and bake for 45-50 minutes with lid on.
  3. Carefully remove turkey from oven. Remove foil lid and return to oven and cook again for 5 minutes to brown.
  4. Carefully remove pan from oven and serve.

 

Sliced Ham

  1. Heat oven to 350F.
  2. Place foil pan into the oven with the lid on, and bake for 45-60 minutes with lid on.
  3. Carefully remove pan from oven and serve.

 

Whole Ham

  1. Heat oven to 350F.
  2. Place foil pan into the oven with the lid on, and bake for 1.5 hours with lid on.
  3. Carefully remove pan from oven. Remove foil lid and return to oven and cook again for an additional 30 minutes.
  4. Carefully remove pan from oven and serve.

 

PRIME RIB

  1. Do not remove foil.
  2. Preheat oven to 300F.
  3. Place the foil covered roast into oven on the middle rack.
  4. Cook for 20-30 minutes.
  5. With a thermometer, check the temperature of the roast
    • Medium Rare: 120F
    • Medium: 130F
    • Medium Well: 140F
  6. Continue cooking to desired temperature, checking every 10 minutes.
  7. Let roast rest before slicing.

 

Hot Appetizers

  1. Heat oven to 350F.
  2. Remove lid and any plastic cover from pan.
  3. Place foil pan into the oven and bake for 8-12 minutes.
  4. Carefully remove pan from oven.

 

Mashed Potatoes, Sweet Potatoes, Dressing

Guidelines are for 4.5-5lb quantities

  1. Remove from refrigeration 1 hour prior to heating. Heat oven to 350F.
  2. Place foil pan into the oven with the lid on, and bake for 20-25 minutes
  3. Carefully remove pan from oven, peel back lid and stir contents
  4. Place lid back on pan and return to oven to cook for an additional 15-20 minutes.
  5. Carefully remove pan from oven and serve

*For 10lb quantities, heat for a total of 45-55 minutes, stirring half way through heating

*For 20lb quantities, heat for a total of 70-80 minutes, stirring twice.

 

Vegetables

Guidelines are for 4.5-5lb quantities

  1. Heat oven to 350F.
  2. Place foil pan into the oven with the lid on, and bake for 20-30 minutes.
  3. Carefully remove pan from oven, peel back lid and stir contents.
  4. Place lid back on pan and return to oven to cook for an additional 10-15 minutes.
  5. Carefully remove pan from oven and serve.

*For 10lb quantities, heat for a total of 45-55 minutes, stirring half way through heating

*For L&B Catering Brussel sprouts do not stir vegetables during the reheating process.
